Easy slow cooker recipe for chicken or beef

If you have a slow cooker, cooking can be done with minimal preparation time, using cuts of meat that are often tough for other methods.

Note that food from the slow cooker does not look very appetizing if it is served as is. The taste and convinience, however make up for it. If you want, you can use garnishing to make the dish look better on the plates.

Ingredients

You do not need any cooking fat for this dish, which makes it the more healthy.

You can use boned or noneless skinless chicken breasts or thighs, or cuts of beef intended for roasting or stewing. Cut the chicken or meat in large pieces, e.g. a breast can be three pieces if it is large, or two if it is smaller.

Vegetables, use as many ingredients as you want, and remove whatever you don't have or don't want. These include:
1 or 2 large onions, or 3 or 4 small onions.
2 medium Carrot
2 or 3 potatoes
Garlic, fresh, or dried

Spices:
You can use poultry seasoning, Italian seasoning, or a mix of coriander, cardamom, cumin and allspice to taste.

Salt and pepper

Chicken, veal, beef or lamb broth. Check this page to make your own homemade broth.

Preparation

Peel the onions, carrots and potatoes and wash them.
Cut them into thick finger portions or cubes. Do not make the pieces too small, so they can stand the long cooking time without disintegrating.
Let the meat reach room temperature
Season the meat with salt and pepper and your spice mix
You do not need to marinade a day before or a few hours before

Cooking

Place the vegetables at the bottom, and the meat on top of it.
Cover 3/4 of the way with broth
Cook for 4 hours on high

Sauce

You thicken the resulting broth using one or two table spoons of flour if you wish, in a separate pan.
Or you can drain the liquid, freeze it, and use it for other recipes like you use broth.

Garnish

You can add some green onions, parsley and/or fresh fennel on top before serving.
You can also add some tomatoes or bell peppers on the side
